My website reviews other websites in a particular niche – I do not sell or review physical products on my site. At present, with this plugin I have to select Aggregate view to display user reviews but Aggregate view is only available under Product reviews. As I do not sell products is this a breach of Google’s rules and could it result in my reviews not being listed on Google?
If so does anybody have any suggestions of how to proceed?

The short answer is yes, you should enable it on the same page you sell the product on, so it’s not recommended to use don’t sell a product. This is what Google says (on the first paragraph) about it. So practically; this is a best fit for e-commerce sites, or if you are selling a product on your own website.
But I’ve seen it working for several sites that is recommending affiliate products, and making commissions from sales. Dose mean they will ban your website? I really don’t know, I’ve got websites that are marked up and working fine for more than 3 years.

I’ve just checked my pages with the Google structured Data tool and am getting the following markup errors
Error: Missing required field “updated”.
Error: Missing required hCard “author”.
I was under the impression all the required fields were added automatically so why are these missing?
How can I correct this?

Mostly, this is missing within the Theme you are using.

That’s not the case – it’s only missing when I’m in aggregate view – When I check a page in Review view the lines are there and there is no error. It must be part of the plugin programming where the error lies.

I understand what you mean, so let me explain it in other words:
This is a common issue in most themes, these markups are missing from the theme on the first place.
so when you use Editor review, the author name is printed out and solved the missing markup in the theme. But, the aggregate view do not have an author (it’s all about user reviews), so the WP Rich Snippets plugin doesn’t print out the author, so the issue show up.
You can do a small test to see by yourself, try deactivating the WP Rich Snippets plugin, then check any of your posts in the Rich Snippets test tool, if I am right, the errors will show up.
